Jouluinen rocky road

200g suklaata
60g voita
2dl vaahtokarkkeja
kuivattuja hedelmiä ja marjoja (rusinat, karpalot)
pähkinöitä (pekaani, pistaasi)
5-10 piparkakkua
5-10 konvehtia (esim. joulusuklaa)
(kanelia, kardemummaa, piparkakkumaustetta, vaahterasiirappia)

n. 50g tummaa suklaata
vaahtokarkkeja
n. 20g valkoista suklaata

Christmas rocky road

For the last recipe of the year (and for the 100th post of the blog) I was supposed to give you a bit more glamorous piece than this, but Christmas took its toll and here we are. However, Christmas also left a lot of treats behind and what would be a better way to mix all the left-overs than rocky road? This "recipe" can take pretty much all the tweaks and changes you can think of, so go through your cupboards and mix a little bit of everything together!

200g chocolate, melted
60g butter, melted
2dl marshmallows
dried fruit and berries (raisins, cranberries)
nuts (pecans, pistachios)
5-10 gingerbread cookies, crushed
5-10 confectionary chocolates (e.g. Fazer Christmas chocolate)
(cinnamon, cardamom, allspice, maple syrup)

about 50g dark chocolate, melted
marshmallows
about 20g white chocolate, melted

Melt the chocolate with butter. You can, for example, use half milk chocolate and half dark chocolate. Mix the marshmallows, dried fruit, berries, nuts and cookies together. Season the melted chocolate if you want and mix it with the cookie mixture. Chop the confectionary chocolate and fold carefully to the mixture. Spread the rocky road evenly into a small cake tin lined with baking paper. Pour the melted dark chocolate (50g) on top of the mixture. The surface isn't supposed to get smooth, just a bit more even. Add the marshmallows on top of the chocolate and garnish with the melted white chocolate. Let set in the fridge for 1-2 hours and cut into squares.

You can use salted peanuts, meringue, popcorn, cereals or muesli or filled cookies or pretty much anything you want. With dark chocolate the taste is a bit deeper, with milk chocolate you end up with sweeter combination. To find your own favourite combo, I recommend making many test runs.

New Year's resolutions aren't really my thing but here's one: I will test more raw cake recipes. If you have some favourite recipe, please let me know!

I wish for you a bubbly New Year's Eve and a wonderful year to come!

Operaatio taatelikakku, osa 2

1dl sokeria
120g voita huoneenlämpöisenä
2 kananmunaa
120g paksua kreikkalaista jogurttia (Lindahls)
2tl vaniljasokeria
1tl soodaa

Operation date cake, part two

The second recipe I tested is a more traditional one with sugar, butter and flour. I chose a recipe from Valio, but the Internet is full of similar kind of cakes. If it works, don't fix it, I guess. You can make the batter in the same pan you cook the dates. Wooden spoon or spatula will do just fine, there's no need to whisk or mix the batter. However, I recommend a bigger pan than just one litre (though I managed with it pretty well...)

250g pitted dates, packed (brick-looking)
2dl strong coffee (or mulled wine)
1dl sugar
120g butter at room temperature
2 eggs
120g thick Greek youghurt (Lindahls)
2 teaspoons vanilla sugar
1 teaspoon bicarbonate
4dl flour

Prehear oven to 175*C. Cook the dates and coffee (or mulled wine) until they turn into smooth purée. Meanwhile mix together the dry ingredients and set aside. Add the sugar into the dates and once the mixture has cooled a bit, add the soft butter. Stir until smooth. Add the eggs one at a time stirring in between. Whisk the youghurt a bit before adding it into the batter. Finally, add the dry ingredients through a sieve to prevent any lumps. Fold the flour into the batter and once mixed and smooth, pour the batter into a greased bundt tin. Bake on the lower part of the oven for 50-60 minutes. Cover the cake with baking paper after 40 minutes, so that the surface won't get too dark. Let the cake cool down a bit and turn it out to a plate. Once cooled, sprinkle with powdered sugar.

This cake isn't as moist and juicy as the first one but then again, few cakes are. Nonetheless it's very nice and tasty. You could use dark or light muscovado instead of regular sugar and drizzle the cake with caramel sauce. So many variations to be tested...

Operaatio taatelikakku, osa 1

Operation date cake, part one

Date cake is a traditional Christmas treat, the recipes are inhereted and they include secret incredients. However, dates haven't been part of my seasonal flavours and I had my first taste of date cake only a couple of years ago. Now I've decided to find a good recipe for Christmas. Such an easy task, since there's a bit over a week left, eh... (HOW can it be only a week?!)

I've managed to go through a few recipes and bought two packs of pitted dates (look like little bricks). Whether it was a smart move is yet to be seen. The nearest supermarket had fresh(ish) medjool dates on sale, so I just had to test this recipe. Flourless, butterless, no added sugar- sort of cake sounded so absurd to me. I made a few little tweaks on the original recipe. Here is a translated version of that, the original one can be found here (in Finnish).

250g fresh medjool dates
0,5dl strong coffee
100g almond meal
1,5 teaspoon baking powder
1 teaspoon Ceylon cinnamon
1 teaspoon cardamom
0,5 teaspoon ground nutmeg
0,25 teaspoon gound ginger
3 eggs
50g dark chocolate (45-55%), roughly chopped

Remove the pits and chop the dates. Mash the chopped dates with the coffee until completely smooth. Mix together the dry ingredients (chocolate as well) and set aside. In a separate bowl whisk the eggs until light and fluffy, about three minutes. Add a bit of whisked egg into the date puree to make the texture lighter. Then carefully mix the dates into the eggs either by hand or electric mixer. You don't want to lose the airiness of the eggs. Fould the dry ingredients gently into the egg and date mixture. Bake in the lower part of the oven for about 30-40 minutes, depending on the shape and size of your cake tin. I used a silicone cake mould but if you don't, grease the tin and flour it lightly with almond meal. Let the cake cool down and turn out carefully to a serving plate.

This cake is soft and juicy. So juicy that you can actually hear it! Just take a bite and you'll know what I'm talking about. So how could I top this..?

Piparkakkutikkarit

Kakkupohja:

Pohja on tehty kääretorttupohjan ohjeella, ideana siis yhtä suuret määrät munia, sokeria ja jauhoja. Kananmunat kannattaa rikkoa lasiin ja mitata sokeria ja jauhoja toiseen lasin saman verran. Tästä määrästä tuli 24cm irtopohjavuokaan sopiva kakkupohja.

3 kananmunaa
noin 1,5dl sokeria (esim tummaa muscovadoa ja kidesokeria)
noin 0,75dl vehnäjauhoja
noin 0,75dl perunajauhoja
1tl kanelia (Ceylon)
0,5tl kardemummaa
ripaus inkivääriä ja neilikkaa / maun mukaan

Munat ja sokerit vaahdotetaan kuohkeaksi, paksuksi vaahdoksi. Jauhot ja mausteet sekoitetaan keskenään ja sihdataan muna-sokerivaahtoon. Jauhot kannattaa käännellä vaahtoon metallilusikan avulla, jotta kuohkeus säilyy mahdollisimman hyvin. Kakkupohjaa paistetaan 175-asteisen uunin alatasolla 15-20 minuuttia, kunnes kakku on kypsä. Anna jäähtyä.

5-10 piparkakkua
noin 100g appelsiinin makuista tuorejuustoa
200g valkosuklaata

Gingerbread cake pops

I had a little Christmas party with work colleagues last weekend and wanted to make something different but still traditional. Cake pops may not be the hottest thing anymore, but for a fingerfood sort of get-together they're still perfect. Spicy cake, gingerbread crumbs and orange flavoured cream cheese create this cristmassy combo. With a bit of effort you can make the cake pops into tiny gifts. Even I managed.

The cake is made with equal parts of eggs, sugar and flour. I recommend to break the eggs into one glass and measure same amount of sugar and flour to another glass. This recipe makes enough for one 24cm round cake tin.

3 eggs
about 1,5dl sugar (eg. dark muscovado and caster)
about 0,75dl flour
about 0,75dl potato flour (farina)
1 teaspoon cinnamon (Ceylon)
0,5 teaspoon cardamom
Pinch of ginger and clove / to taste

Preheat oven to 175*. Whisk the eggs and sugars until very light and fluffy. Mix together the flours and spices and add through a sieve into the egg mixture. Fold the dry ingredients carefully with a metal spoon until smooth. Bake the cake for 15-20 minutes in the lower part of the oven until cooked. Let the cake cool down on a wire rack.

5-10 gingerbread cookies
about 100g orange flavoured cream cheese
200g white chocolate
decorating gels

Break the cake and gingerbread into crumbs and mix with cream cheese until the mixture starts to stick together. Press and shape the cake into cubes (or balls) and let set and cool in a freezer. This will help the chocolate set faster.

Melt the chocolate carefully in the microwave or bain-marie. I used a big coffee mug so that the cubes were easier to dip in the chocolate. Drop the cubes / balls one by one into the chocolate and once completely covered use a fork or spoon to lift the cubes out of the chocolate. Dip the cake pop sticks in the chocolate as well before pressing them into the cake cubes and let set in the fridge. Before serving pipe tiny bows and ribbons with decorating gel.

Paholaisenkakku valkosuklaakuorrutteella

Minun piti tehdä tämä kakku alun perin jouluksi, mutta suunnitelma muuttui matkan varrella ja jouluna syötiinkiin aatonaattona vietetyiltä syntymäpäiviltä jäänyttä kakkua, sacher- tyyppistä suklaaunelmaa. Siitä lisää myöhemmin. Tämän kakun reseptin löysin sattumalta Leila Lindholmin sivuilta, kakku kulki siellä nimellä Mr. Snowman's Devil's Food Cake. Itse reseptiä en sivuilta enää löytänyt, harmillista, sillä en tietenkään kirjoittanut sitä itselleni ylös.

(Huom!

In English:

Since some of the readers seem to be coming from other countries than Finland, I figured it might be nice to translate the recipes in English, as well. The original Leila Lindholm's recipe is in Swedish, so that might not help very much, either. So here goes:

Mr. Snowman's Devil's Food Cake

3dl light (or dark) muscovado
4 eggs
200g butter (melted)
1dl light syrup
5dl plain (all-purpose) flour
1,5dl cocoa powder
3 teaspoons baking powder
1 teaspoon vanilla sugar
pinch of salt
3dl milk (3%)
200g dark chocolate 70% (melted)

Preheat oven to 180*C (350*F). Whisk eggs and sugar until pale and thick. Add the melted butter and syrup. Mix together the flour, cocoa, baking powder, vanilla sugar and salt. Gently fold them into the egg mixture and add the milk. Finally, add the melted chocolate and fold carefully to combine. Divide between three 20cm-round lightly greased cake tins lined with non-stick baking paper. Bake in the middle of the oven for about 15 minutes or until toothpick or other cake tester comes out clean. Cakes should be cooked but still moist. Remove the cakes from the tins and cool completely on a wire rack covered with a tea towel.

600g white chocolate (good quality)
600g cream cheese (at room temperature)

Melt the chocolate, whisk the cream cheese until soft and little fluffy and combine with melted chocolate. Whisk well and spread between the cakes and on top. For the cake in the picture I used only two of the three cakes, 300g of white chocolate and cream cheese each and dark chocolate as garnish.
