Punaherukka-kinuskipiiraat

Syksy tuo myös leivontaan tummempia sävyjä, vähän rouheampaa meininkiä ja comfort food- henkeä. Olen tehnyt jo useamman kasvissosekeiton kurpitsasta, bataatista, porkkanasta ja sipulista, koska se nyt vaan on niin hyvää ja helppoa. Kurpitsaa meni viime viikonloppuna myös risottoon, ja Halloweenin hengessä pitäisi vielä löytää hyvä kurpitsapiirakan resepti. Löysin sellaista oikeaa purkkipyrettä kaupasta, ja pitäähän sitä päästä testaamaan. Pyhäinpäivä menee itselläni luisteluleirillä, mutta eiköhän kurpitsapiirakkaa voi syödä muulloinkin.

Tämä resepti on muunnos Maku-lehden alkuperäisestä. Jos ei jaksa väkerrellä liikoja, voi tästä tehdä myös yhden kokonaisen piirakan. Yksittäiset piiraat syntyvät kuitenkin aika helposti muffinsipellin koloihin ja ovat toki söpömpiä kuin iso piirakka. Oikoa voi myös kinuskissa, jos käyttää valmista purkkikastiketta. Kermasta ja fariinisokerista tulee minun mielestäni kuitenkin parempi kastike tähän tarkoitukseen.

2,5dl kuohukermaa
1,5dl fariinisokeria

Sekoita kerma ja fariinisokeri paksupohjaisessa kattilassa, kuumenna ja anna kiehua miedolla lämmöllä 5-7 minuuttia välillä sekoittaen. Kaada lämmönkestävään kulhoon ja anna jäähtyä vähintään huoneenlämpöiseksi. Kinuskista tulee paksumpaa jäähtyessään, joten huomioi tämä keittoajassa. Valmista kinuskia tulee reilu kaksi desiä riippuen keittoajasta.


100g voita huoneenlämpöisenä
0,75dl ruokokidesokeria tai vaaleaa muscovadoa
1 kananmuna huoneenlämpöisenä
1dl ruisjauhoja
1dl vehnäjauhoja
0,75dl kaurahiutaleita
1tl leivinjauhetta

Vaahdota huoneenlämpöinen voi ja sokeri kuohkeaksi, vaaleaksi vaahdoksi. Lisää kananmuna ja vatkaa seosta, kunnes rakenne on jälleen tasainen. Seokseen voi lisätä lusikallisen jauhoja rakennetta parantamaan. Sekoita kuivat aineet keskenään ja lisää ne kerralla taikinaan, vatkaa tasaiseksi. Taikina jää melko kosteaksi. Voitele muffinsipellin kolot hyvin tai voitele ja jauhota piirakkavuoka. Painele taikina kolojen pohjalle ja reunoille / vuokaan jauhotetuin käsin. Itse sain taikinan riittämään 11 koloon, tusinan verrankin olisi tullut, jos en olisi ensimmäisten kolojen kohdalla ollut turhankin reilu annostelussa.

150g punaherukoita
2tl perunajauhoja
2dl kinuskikastiketta
1 kananmuna

Sekoita kohmeiset punaherukat ja perunajauho hyvin sekaisin. Lusikoi marjat taikinakoloihin tai levitä piirakkapohjan päälle. Sekoita kinuskikastike ja kananmuna hyvin sekaisin. Valuta kinuskiseos punaherukoiden päälle. Yksittäisten piiraiden kanssa voi käyttää esimerkiksi ruokalusikka-mittaa, jotta kinuskiseoksen saa siististä paikoilleen. Paista 200-asteisen uunin alatasolla noin 20 minuuttia yksittäisiä piiraita ja 25-30 minuuttia kokonaista piirakkaa. Piiraiden irrottaminen lämpimänä on vaikeaa, joten anna niiden jäähtyä hyvin. Reunojen irtoamisen voi vielä varmistaa esim. pyöräyttämällä hammastikulla piiraan ympäri. Nämä ovat hyviä tällaisenään, mutta lisukkeena voi tarjota vaikka vaniljajäätelöä tai kanelilla maustettua vaniljarahkaa.

Redcurrant and caramel pies

Fall calls for sort of darker shades in the kitchen, more rustic food, deeper flavours. Spirit of comfort food, if you will. I've cooked puréed vegetable soup once a week since butternut squash, sweet potato, onion and carrot is just such a nice combination and soup is so easy to make. Add a hint of cinnamon to the mix and you've really got something, trust me!

This recipe is originally from a food magazine called Maku, though I've changed it a bit. You could make small individual pies or just one regular pie with this. Cutting more corners, you can use store-bought caramel sauce instead of making it yourself, but this one is really easy to make, no cooking the sugar syrup and burning yourself -thing needed.

2,5dl double cream
1,5dl farin sugar (white sugar coated with cane molasses or dark syrup, Scandinavian thing)

Mix the cream and sugar in a heavy-bottomed saucepan, bring to the boil and let simmer on low-medium heat for 5-7 minutes, stirring occasionally. Let the caramel sauce cool down to at least room temperature. Caramel will thicken as it cools. This recipe makes a bit more than the required 2dl of sauce, depending on the boiling time.

100g butter, softened
0,75dl fine cane sugar or light muscovado
1 egg, at room temperature
1dl fine rye flour
1dl all-purpose flour
0,75dl rolled oats
1 teaspoon baking powder

Preheat oven to 200*C. Beat the butter and sugar until light and fluffy. Add the egg and beat well until the mixture is well combined and smooth again. You could add a spoonful of flour if the smooth consistency seems to be difficult to reach. Mix all the dry ingredients well together and add them to the batter. It will be quite a soft dough. If you're making individual pies, grease the muffin pan well. If you make one big pie, grease and flour the dish. Using your fingers (and flour, if needed) press the dough to the bottom and sides of the muffin pan or to the pie dish. I managed to make 11 pies, though 12th would have been possible had I been a bit less generous with the first ones.

150g redcurrant, frozen
2 teaspoons potato flour / corn starch
2dl caramel sauce
1 egg

Mix the redcurrants and potato flour / corn starch well. Spoon the berries in to the pie "cups" or spread them evenly on top of the dough. Mix the caramel sauce and egg until well combined and spoon / pour the mixture on top of the berries. Bake on the lower part of the oven for about 20 minutes for the individual pies and 25-30 minutes for one big pie. Before taking the pies out of the muffin pan let them cool down. You could run a toothpick around the edges to make sure they'll come out nicely. Serve with vanilla ice cream or e.g. cinnamon whipped cream.
