Kaneliset kaurakeksit

Maanantaista on tullut lähes vakituinen leivontapäivä. Talviaikaan siirtyminen tuntuu nyt ottavan erityisen koville ja tämän päivän pimeys vaati piristystä. Dessert for Two -blogin ohje pelasti päivän! Tämän tyyppisiä keksejä olen leiponut ennenkin, mutta ohje on aina jäänyt kirjoittamatta muistiin. Määrät ovat "käännöksiä" amerikkalaisesta cup-mitasta, siksi ne näyttävät vähän hassuilta. Muunsin Christinan reseptiä jonkin verran, tässä oma versioni:

5rkl voita huoneenlämpöisenä
3rkl hunajaa
0,5tl vaniljaa
120ml tummaa ja vaalea muscovadoa sekoitettuna
1 iso keltuainen tai 2 pientä
120ml kaurahiutaleita
180ml vehnäjauhoja
0,5tl leivinjauhetta
0,2tl soodaa
0,75tl maissitärkkelystä
0,5tl kanelia

Voi, hunaja, vanilja ja sokerit vatkataan tasaisesti sekaisin (noin minuutin ajan). Lisätään keltuainen ja vatkataan tasaiseksi. Kuivat aineet sekoitetaan keskenään ja lisätään kahdessa erässä voi-sokeriseokseen. Taikinaan voi lisätä vähän vettä, jos massa on kuivaa eikä muotoudu käsissä palloksi. Kun taikina on valmis, muotoillaan se pieniksi palloiksi ja litistetään leivinpaperille kiekoiksi. Keksejä paistetaan 175-asteisen uunin keskiosassa noin 10-12 minuuttia. Keksit jäävät vähän pehmeiksi.

Kaurahiutaleita voi pyöräyttää blenderissä tai monitoimikoneessa ennen muihin kuiviin aineisiin sekoittamista. Tarkoituksena ei ole saada täysin hienoa jauhoa, ainoastaan pienentää hiutaleita jonkin verran. Taikinaan voi käyttää myös tavallista sokeria. Eri sokerit vaikuttavat paitsi makuun myös rakenteeseen ja ulkonäköön. Ainoastaan kokeilemalla löytyy parhaiten omaan makuun sopiva yhdistelmä.


Mondays have become almost regular baking days for me. Turning back the clocks seems to be especially difficult this year and today needed bit of a pick-me-up. Dessert for Two's writer Christina must have known this, since her recipe for oatmeal cookies did the trick. I've baked this kind of cookies before, but never wrote the recipe down. Instead of granulated sugar I used dark and light muscovado combined and two small egg yolks. Otherwise I followed the recipe. I didn't make the cinnamon glaze however, but dipped in hot chocolate can't be much of a worse version, I'm sure.

Pull apart -pulla

Olen ennemminkin kertonut, kuinka pullan leipominen ei ole minun juttu. Pidän pullasta, erityisesti korvapuusteista, mutta niiden leipominen ei tunnu onnistuvan koskaan. Sisus on raaka ja päällinen palaa. Maku- lehden Lunni leipoo -blogista löysin pull apart -pullan reseptin. Flunssan selättämisen toivossa testasin - varauksella - reseptiä ja hyvä että testasin! Pullaviipaleet paistuivat vähän bostonkakku-tyyppisesti yhteen, mutta nimensä mukaisesti pullasta saa vedettyä parin viipaleen annospaloja. Lämmin, tuore pulla ja lasillinen kylmää maitoa on aika lyömätön yhdistelmä. Jos pullaa sattuu jäämään, seuraavana päivänä siitä voisi tehdä french toast-henkistä aamupalaa tai bread pudding-tyyppistä jälkiruokaa.

Tein pullan muutoin reseptin mukaan, mutta lisäsin noin teelusikallisen kardemummaa maidon sekaan ennen lämmitystä ja käytin hieman vajaan pussillisen kuivahiivaa tuorehiivan sijaan. Kohotin pullan vuoassa noin 40-asteisessa uunissa ja voitelin sen kananmunalla ennen uunin alatasolla paistoa.

Baking cinnamon buns is really not my forté. I love cinnamon buns, especially the Finnish korvapuusti, but for one reason or the other it never seems to go according to my plan. The inside stubbornly stays a bit raw and the outside gets burned, so I've given up. However, I found this pull apart- cinnamon bun's recipe from Lunni leipoo -blog. The bun slices get baked together but as the name says, you can pull apart pieces of the bun. Warm, fresh cinnamon bun and a glass of cold milk is quite an unbeatable combination. Would there be any leftovers the next day, you could use the bun for french toast as breakfast or bread pudding as a dessert.

I baked the bun almost according to the recipe (translated below). The only changes were cardamom and dried yeast instead of fresh yeast. I also brushed the proofed bun with eggwash before baking it.

2,25dl milk
1 teaspoon cardamom
120g butter, melted
0,75dl sugar
9-10g dried yeast
+-8dl flour

Mix the milk and cardamom and warm up to about 42*C. Mix the yeast and 2dl of flour together. Whisk together the spiced milk, melted butter, sugar and the yeast and flour mixture until smooth. Add the rest of the flour gradually and knead the dough for 5-10 minutes until it's springy and soft. Proof in a warm place under a cloth until the dough has doubled in size. Roll the dough to about 50x30cm rectangle and spread the filling on top:

55g butter
1dl sugar
1 tablespoon cinnamon

Melt and brown the butter, but be careful as the butter gets easily burned. Let the browned butter cool down and spread on top of rolled-out bun dough. Mix together the sugar and cinnamon and sprinkle on top of the buttered dough. Cut the dough into slices, pile the slices together and cut into squares. Place the squares to a buttered bread tin (22x12cm) and let proof again (covered) for 20-30 minutes. I proofed mine in the lower level of a 40*C oven. Brush the bun with eggwash and bake in 175*C for about 25-35 minutes. If the top starts to turn dark, cover the bun loosely with baking paper. Let the bun stand a while in the tin and transfer to a plate or cut/pull into slices straight in the tin. Oh the yumminess!

Porkkanakakku

Sunnuntain kunniaksi leivoin porkkanakakkua Painted by cakes- blogin ohjeella. Laitoin taikinaan kokonaisen teelusikallisen kanelia sekä pari ruokalusikallista vaahterasiirappia, ja öljynä käytin rypsi- ja pähkinäöljyjä. Muutoin noudatin reseptiä. Pohjat paistoin kahdessa matalassa 15-senttisessä irtopohjavuoassa, joten kerroksia tuli neljä. Paistoaika oli noin 40 minuuttia.

Tuorejuustotäytteessä korvasin maidon vaahterasiirapilla, muutoin sekin on reseptin mukainen. Kunnianhimo iski sen verran pahasti, että sokerimassalla kuorruttaminen tuntui taas hyvältä idealta. No, eihän minun kärsivällisyys (ja taidotkaan) riitä esimerkiksi Emman loihtimien koristeiden tasolle. Jätän siis jatkossakin massalla taiteilun osaajille, ja teen tuorejuustokuorrutusta tuplamäärän.

Kakun resepti tulee kyllä aktiivikäyttöön, kakkupohja on porkkanan ja öljyn ansiosta ihanan mehevä ja määrältään sopiva, sillä aina ei tarvitse olla suurta kakkua. Testasin taikinaa myös muffinsivuoissa, noin 20 minuutin paistoajalla kakkuset olivat juuri sopivan kypsiä. Porkkanaiset kuppikakut ovatkin to do- listalla ennen pitkää...

Sunday is the best bakeday, don't you think? And cakeday, right? Right? I made this carrot cake with Painted by cakes' recipe. Only alterations were a whole teaspoon of cinnamon and two tablespoons of maple syrup for the batter. I also mixed a bit of walnut oil with canola oil. Otherwise I followed the recipe. The cakes were baked in two fairly shallow 15cm cake tins, so they were cooked through in about 40 minutes.

For the cream cheese filling I replaced the milk with maple syrup. Being a bit ambitious and all, I tried to be crafty and cover the cake with sugar paste. I was - yet again - reminded that with my (lack of) patience and perfectionist nature fondant is not my thing. So next time I'll double the amount of the cream cheese filling and leave sugar paste to those who can.

The cake itself was wonderfully moist and tasty, thanks to carrot and canola oil. I tested the batter in a few muffin tins as well, and with 20 minutes baketime they turned out very nice. So carrot cupcakes, you might be my next target...

Sitruunainen jogurttikakku

Tämä sitruunalla maustettu kuivakakku on makumaailmaltaan aika kesäinen, mutta toisaalta kirpeänmakea kakku piristää syksyistä iltaa mukavasti. Taikinaa ei tarvitse vaahdottaa ja kreikkalainen jogurtti pitää koostumuksen mehevänä. Resepti on Donna Hayn käsialaa, mutta tein puolikkaalla ohjeella vain pienen kakun.

90ml rypsiöljyä
1 kananmuna
0,5-1rkl raastettua sitruunankuorta
30-40ml sitruunanmehua
140g paksua kreikkalaista jogurttia
180g Siro-sokeria
150g vehnäjauhoja
0,5-1tl soodaa

Öljy, muna, sitruunankuori ja -mehu sekä jogurtti ja sokeri vispataan keskenään tasaiseksi. Lisätään vehnäjauhot ja sooda sihdin läpi ja sekoitetaan taikina tasaiseksi. Kaadetaan n. 1,2-litraiseen torvivuokaan ja paistetaan 160-asteisen uunin keskiosassa noin 25 minuuttia. Kumotaan kakku hetken jäähtyneenä ja valutetaan sokerikuorrute lämpimän kakun pinnalle:

60g tomusokeria
1rkl sitruunamehua
kiehuvaa vettä
0,5-1 rkl raastettua sitruunankuorta

Sokeri ja nesteet sekoitetaan tasaiseksi seokseksi. Kuorrutteen tulisi olla valuvaa, mutta ei liian löysää. Koristellaan sitruunankuorella ja annetaan kuorrutteen asettua 10-15 minuuttia ennen tarjoilua.

This lemony cake tastes like summer, but on the other hand it also cheers up darkening autumn nights. There's no whisking involved and the Greek yoghourt keeps the cake nice and moist. This is Donna Hay's recipe but I made just a half of the original to make a smaller cake.

90ml vegetable (canola) oil
1 egg
0,5-1 tablespoon lemon rind, finely grated
30-40ml lemon juice
140g thick Greek yoghourt
180g superfine sugar
150g flour
0,5-1 teaspoon carbonate of soda

Preheat oven to 160*. Whisk the oil, egg, lemon rind and juice, yoghourt and sugar to combine. Sift over the flour and bicarbonate and stir until smooth. Pour into a 1,2-litre Bundt tin and bake in the middle of the oven for about 25 minutes. Let sit for 5 minutes, turn onto a cake stand and pour over the icing:

60g icing sugar
1 tablespoon lemon juice
boiling water
0,5-1 tablespoon lemon rind, finely grated

Mix the sugar with lemon juice and a bit of water. The icing should spread nicely but not be too runny. Garnish with the lemon rind and let set for 10-15 minutes before serving.
