Lemon squares

The recipe for these sweet and tangy lemon squares was originally posted on the blog back in 2014 (here). I found it in Pirkka- magazine. However, it's only in Finnish, so here's the translation. Sweetness of the condensed milk and tangy lemon make a perfect pairing for springtime!


120g soft butter
1,5dl brown sugar
2,5dl rolled oats
2dl all-purpose flour
0,5 teaspoon baking powder
0,5 teaspoon salt

Preheat oven to 175*C. Beat the soft butter and brown sugar until pale and fluffy. Add the dry ingredients and whisk until the texture is crumbly, like clumps of wet sand. Pour 2/3 of the crumb to a lined 20 x 20cm square brownie pan or 20-22cm round cake tin. Press the dough with a spoon or by hand to make an even, dense base.

397g condensed milk
0,75dl lemon juice
1-2 teaspoons grated lemon zest

Mix the condensed milk, lemon juice and zest in a small bowl. The lemon juice will make the milk even thicker. Pour the mixture on top of the base and add the rest of the oat crumb on top. Bake in the middle of the oven for 20-25 minutes until the filling is set and the crumb has a golden colour. Let cool down and place in the fridge for at least an hour. Cut into squares and let stand in room temperature for a while before serving.
