Jauhoton suklaakakku viskillä (tai ilman)

Tämä resepti tuli vastaan sattumalta, kun etsin viime viikolla viskikakun ohjetta. Hyvä niin, koska totesin sen kertaheitolla mainioksi ja nyt on testattu myös alkoholiton versio. Jos kaipaat todella suklaista, mehevää, mutakakkumaista herkkua, joka on vielä jauhotonkin, niin etsintäsi on ohi!


200g tummaa suklaata
140g voita
1/2 cup + 2rkl (= 1,5dl) sokeria
1mm suolaa
5 L-koon kananmunaa (huoneenlämpöisinä)
1/2 cup + 2rkl (=1,5dl) leivontakaakaota
1,5tl vaniljauutetta
1/3 cup (=0,8dl) viskiä (tai jäähtynyttä vahvaa kahvia)

Sulata suklaa ja voi varovasti mikrossa tai vesihauteessa. Sekoita tasaiseksi ja lisää sokeri ja suola hiljalleen vatkaten. Lisää kananmunat yksitellen, vatkaa hyvin jokaisen jälkeen, jotta seos säilyy tasaisena. Sihtaa joukkoon kaakao, lisää vanilja ja viski/kahvi ja vatkaa taikina tasaiseksi. Kaada 22cm irtopohjavuokaan ja paista 190-asteisen uunin keskitasossa 18-22min uunista riippuen. Kakun on tarkoitus jäädä kosteaksi, joten varo paistamasta liikaa. Anna jäähtyä vuoassa hetki, irrota reuna varovasti ja jäähdytä kokonaan.

100g tummaa suklaata
1tl (pähkinä)öljyä
1tl viskiä (tai vahvaa kahvia)

Sulata suklaa varovasti mikrossa tai vesihauteessa. Lisää öljy ja viski/kahvi, sekoita hyvin ja levitä jäähtyneen kakun päälle. Kakun voi tarjota heti jäähtyneenä, mutta se on parhaimmillaan jääkaapissa vietetyn päivän tai yön jälkeen.

Ruskea sokeri (intiaani-, kookos- tai muscovado) lisää makua ja mehevyyttä. Itse käytin taloussuklaata, koska kaakao syventää suklaisuutta entisestään. Viskin voi korvata myös rommilla tai liköörillä, kokeile vuodenajan ja fiiliksen mukaan!



In English:

Flourless Chocolate Cake with (or without) whiskey

I found this recipe last week while I searched one for whiskey cake. And I'm glad I did because it turned out to be a very good one and by now I've already tested the alcohol-free version of it as well. And to add into its greatness, there's no flour!

200gdark chocolate (at least 55%)
140g butter
1/2 cup + 2 tablespoons (brown) sugar
pinch of salt
5 large eggs
1/2 cup + 2 tablespoons cocoa powder
1,5 teaspoons vanilla extract
1/3 cup whiskey (or cooled strong coffee)

Preheat oven to 190*C. Carefully melt the chocolate and butter in microwave or in a heatproof mixing bowl over a pan of simmering water. Stir until smooth and slowly add the sugar and salt while whisking. Mix in each egg, one at a time and make sure to combine completely between each addition. Sift the cocoa, add the vanilla and whiskey/coffee and mix on low speed until well combined. Pour the batter into a prepared 22cm tin and bake in the middle of the oven for 18-22 minutes, depending on the oven. This cake is supposed to stay moist, so be careful not to overbake it (dry cake is just not good). Let cool down for a couple of minutes, remove the tin rim and let cool completely.

100g dark chocolate
1 teaspoon (nut) oil
1 teaspoon whiskey (or cooled strong coffee)

Carefully melt the chocolate in microwave or in a heatproof mixing bowl over a pan of simmering water. Stir until smooth, add the oil and whiskey/coffee and stir to combine. Spread on top of the cooled cake and serve. I liked the cake even better after a night in the fridge, since the texture and flavour get more intense. You could replace the whiskey with rum or liqueur, whichever you like more.
